I love the crunchy texture of a fresh veggie slaw, but I have never loved it with the typical mayonnaise-based dressing. Here’s a super simple recipe to serve as a side dish. You can make it in about ten minutes, and it keeps well for a few days in the fridge.
Combine the following in a large bowl:
½-1 small red cabbage, very thinly sliced
½-1 small green cabbage, very thinly sliced
1 ½ cups grated carrots
2 tablespoons each of chopped, fresh basil, mint, and either cilantro or dill
Whisk together the following:
Juice of ½-1 lemon
3 tablespoons sherry or apple cider vinegar
Pinch of fine sea salt
1 teaspoon of dijon mustard
1 teaspoon maple syrup
Let these sit for about five minutes, and then whisk in ⅓ cup of olive oil.
Pour dressing over the slaw and serve it up! Need a hero for your sidekick? How about Sarah’s Summer Zucchini Fritters? Need more ways to whip up zucchini (in case your garden is doing what my garden is doing)? Finish the meal with these amazing Zucchini Tahini Cookies.
